In olden times, especially during war, there was a stone grill used for cooking meat over a naked flame. They were called ‘Firedogs’ because, to pay tribute to the hounds that protected the camp, soldiers would carve homages of dogs into the grill.
The sophisticated simplicity of our menu is our way of giving honour to the history of cuisine across the Mediterranean and around the Greek islands. Where there was once a constant battle, there is now peace and we celebrate that with our dishes.
